How do you make a real cappuccino?
I know how to properly make micro-foam but I'm not sure if a cappuccino is supposed to have foam on the top of it. Some books i have read say it does but I have seen a video of an Italian barista shake the frothing pitcher (like you would at the end of a latte to make art) the entire time he's pouring and it seems to infuse foam in the espresso. Can anyone give me any advice?
a proper cappuccino is 1/3 espresso, 1/3 steamed milk, 1/3 foam.
